Ingredients
Makes 6-8

Whisked egg and a little water
Dough
- 5g yeast, 1/2 tbsp water, 100 ml water
- 75 ml milk
- 15g butter
- 3/4 tbsp honey
- 2 tsp orange rind
- 60 g raisins/currents
- 60g sultanas
- 1 egg
- 250g flour (+ 100g for kneading)
- 1/2 tsp salt
- 2 tsp cinnamon
Method
- Warm up milk on stove, add honey and butter and combine.
- Activate yeast, then add egg, rind, and fruit. Combine flour,
cinnamon and salt. Add the yeast and fruit mixture, then add the milk
mixture. Combine everything. Cover and leave in a warm place until dough
doubles.
- Lightly knead mixture, then raise again.
- Divide into 6-8 pieces, shape into balls. Place on baking trays and
rest for 30 min.
- Preheat oven to 200 C.
- Make flour paste, and pipe crosses onto the buns. Glaze. Bake for 25
minutes.
